Vanilla Bliss: Three Layers with Zesty Lemon Curd and Italian Buttercream

Hello, fellow food enthusiasts!

One year in confetti, celebrating a food blog anniversary

Exactly one year ago, amidst the whirlwind of my final college semester, I took a leap of faith and launched my food blog. With a marketing bachelor’s diploma just three months away, I found myself at a crossroads, filled with a mix of confusion and trepidation. Like many recent graduates, I wasn’t entirely sure what path my life would take.

However, one thing was clear: I yearned for the autonomy of self-employment. The idea of setting my own schedule, working whenever and wherever inspiration struck, was incredibly appealing. I also understood that this journey would be anything but easy. The world of blogging, especially in the saturated food niche, often demands immense effort with little immediate reward. It’s this very challenge that leads many aspiring creators to abandon their dreams. Yet, here I am today, filled with immense gratitude and pride, penning this one-year anniversary post!

Birthday cake: Vanilla bean Italian meringue, lemon curd, and vanilla cake layers

Celebrating Milestones with a Masterpiece: Layered Vanilla Cake with Zesty Lemon Curd and Silky Italian Meringue Buttercream

Today, I am absolutely thrilled to share with you a special creation: this exquisite Layered Vanilla Cake, crowned with a vibrant Lemon Curd and luscious Vanilla Bean Italian Meringue Buttercream. While I initially baked this beauty for my little sister’s birthday on April 2nd, its proximity to my blog’s anniversary made it the perfect centerpiece for our celebration here at lifestyleofafoodie. What better way to mark a year of culinary adventures than with a cake that truly embodies passion and dedication?

To my fellow bloggers and aspiring creators, let me be transparent: building a presence in this dynamic online world is incredibly challenging. There are days filled with self-doubt, where progress seems agonizingly slow. But I hold firm to the belief that with unwavering effort and genuine passion, success is attainable. As for me, my commitment remains steadfast: to continue bringing you innovative and delicious recipes that I hope will inspire joy and creativity in your own kitchens.

My journey is a testament to the power of persistence. If there’s something you truly desire, never give up. Keep pushing, keep learning, and keep creating until you begin to see the progress and results you’ve tirelessly worked for. Think of it this way: if you’ve invested months or even years into a pursuit, imagine the breakthroughs an extra day, week, or month of effort could bring. Quitting prematurely means missing out on the unknown possibilities that lie just beyond the horizon.

One thing is for sure: if you give up too soon, you don’t know what you will be missing. Embrace the process, celebrate small victories, and let your passion guide you.

Crafting the Perfect Anniversary Treat: A Symphony of Vanilla, Lemon, and Meringue

Now, let’s delve into the star of our celebration: this mouthwatering Layered Vanilla Cake with Lemon Curd & Vanilla Bean Italian Meringue Buttercream. This recipe is a carefully curated masterpiece, designed to highlight three of my absolute favorite elements in the world of baking.

First, there’s the incredibly soft and flavorful vanilla cake – a true classic, perfected. Then, we have the invigoratingly tangy and tart lemon curd, adding a bright burst of citrus. Finally, it’s all enveloped in a silky smooth, ethereal vanilla bean Italian meringue buttercream. If you share my culinary preferences, you understand the magic of this combination. The interplay of these flavors and textures creates a truly unforgettable dessert. If you haven’t ventured into making something similar, I wholeheartedly encourage you to try this recipe. Be prepared to dedicate some time, as it requires a bit of effort and precision. However, you can certainly prepare individual components of this Layered Vanilla Cake with Lemon Curd in advance to streamline your baking process.

Achieving the Ideal Vanilla Cake Layers: A Quest for Perfection

My journey to find the “best” vanilla cake recipe for this grand celebration led me down a delightful rabbit hole of internet research. After countless hours of reading reviews, watching YouTube tutorials, and meticulously analyzing various recipes, I ultimately decided to adapt a recipe from the acclaimed The Preppy Kitchen. John, the talented author behind this blog, had a recipe that promised three perfectly equal 6-inch cake layers, renowned for their flat tops and exceptional moistness.

My primary goal was to avoid any trimming, as I always strive to minimize waste in the kitchen. John’s genius solution for achieving consistently flat and moist layers without waste involves a simple yet incredibly effective technique: using fabric baking strips. These strips, soaked in water and wrapped around the cake pans, work by insulating the sides of the cake. This slows down the baking process at the edges, allowing the entire cake to bake uniformly. Without them, the outer edges bake significantly faster than the center, leading to a noticeable dome in the middle of your cake layers. This simple trick ensures a beautifully level cake every time, eliminating the need for wasteful trimming.

The Zesty Heart of the Cake: Homemade Lemon Curd

Beyond the luscious vanilla layers, the filling of this cake holds a special place in my heart. Lemon curd is a staple I’ve been making since childhood, thanks to my mom’s fondness for lemon pies, which provided ample practice. My passion for pastry was further honed during a three-month internship with a renowned pastry chef in Las Vegas, where I perfected my lemon curd technique, often making it twice a week.

Creating this lemon curd begins by gently heating fresh lemon juice and zest. This aromatic liquid is then carefully tempered into a mixture of sugar and egg yolks, a crucial step that prevents the eggs from scrambling. After returning the mixture to the pot and whisking until it thickens to a velvety consistency, the final touch involves hand-blending in cold butter. This method yields a remarkably stable and rich lemon curd that holds its shape beautifully within the cake layers, creating visually stunning and delectable slices.

Mastering the Silky Vanilla Bean Italian Meringue Buttercream

Alright, I’ve saved the best for last! One of the components I’m most proud of in this celebratory cake is the vanilla bean Italian meringue buttercream. For years, I relied on traditional American buttercream, but I often found it excessively sweet and heavy, frequently overpowering the delicate flavors of my cakes and fillings. I was determined to find a more refined alternative.

This time, I challenged myself to try something new, and the sense of accomplishment upon mastering this buttercream was immense! My first attempt, following a recipe from Yolanda’s “How To Cake It” website, proved to be a learning curve. Despite rigorous whipping, my meringue didn’t cool sufficiently, and the addition of even small chunks of room-temperature butter caused the entire mixture to collapse into a soupy mess. That was a definite fail, but a valuable lesson learned.

Recognizing the issue immediately, I set that batch aside to cool in the freezer, hoping to salvage it later, and began a second attempt. For this batch, I meticulously ensured the meringue reached the correct temperature, and crucially, that the mixing bowl itself was cool to the touch before incorporating the butter. By slowly adding the butter in small increments, the buttercream magically began to come together. The result was breathtaking: an incredibly smooth, silky frosting, adorned with tiny specs of vanilla beans, offering both exquisite flavor and a sophisticated appearance. This buttercream perfectly complements the cake and curd, creating a harmonious balance of sweetness and tang.

Expert Tips and Tricks for Baking the Best Layered Cake

For this special anniversary post, I am incredibly proud to have collaborated with two other immensely talented food bloggers, Ashley from Foodislife and Ai from Aimadeitforyou. They’ve graciously shared their invaluable insights and expert tips to help you achieve perfectly layered cakes every single time. Their advice covers everything from preparing your pans to mastering the art of decorating, ensuring your baking endeavors are a resounding success.

Getting Your Cakes Out of the Pan Flawlessly:

  • One of the most crucial steps to baking a truly beautiful cake is ensuring it releases cleanly from the pan. After all the time, effort, and even a bit of elbow grease you’ve invested, it’s incredibly disheartening when your perfectly baked cake stubbornly adheres to the pan. The solution is simple yet vital: thoroughly grease your cake pan and line the bottom with parchment paper. To do this, simply trace the base of your pan onto parchment paper with a pencil, then cut it out with scissors. For an even easier release, you can go an extra step and line the sides of the pan with parchment as well. This creates a non-stick barrier that guarantees a smooth transition from pan to cooling rack.

Achieving Perfect Leveling for Professional Results:

  • Occasionally, cake tops can bake unevenly, presenting a challenge for stacking. If this happens, a clever trick is to place the uneven cake layer face down on your cake board. On the side that is uneven or lower, add a small dollop of icing to the cake board, and then gently press the cake down until it becomes level. This simple adjustment not only ensures a flat surface for subsequent layers but also helps to anchor the entire cake firmly to the board, preventing any unwanted movement during decoration.

  • For the most precise and consistent cake layers, weighing your batter is a game-changer. By placing each cake pan on a kitchen scale and pouring equal amounts of batter into them, you guarantee that each layer will bake to the same thickness. If a kitchen scale isn’t available, you can use measuring cups or even eyeball it in a pinch, though the accuracy may vary. This method is incredibly effective in producing uniform layers, which are essential for a stable and aesthetically pleasing stacked cake.

Ai from Aimadeitforyou

  • If your baked cake layers have uneven heights or domed tops, you can easily rectify this with a ruler and a sharp serrated knife. Lay your ruler vertically against the side of the cake and use your knife to make small, even marks at your desired height all around the perimeter. Once you have a guide, carefully slice off the excess, connecting your marks to create a perfectly level top. For client cakes, I often take this a step further by also trimming off the caramelized crust from the bottom and sides. This technique not only ensures uniform layers but also reveals the pristine cake interior, creating a much more elegant and appealing presentation when the cake is sliced.

Mastering Cake Layering for Stability and Beauty:

  • To add icing evenly between layers and ensure a level stack, the easiest method is to use a piping bag. Fill your piping bag with frosting and pipe a neat ring around the outer edge of the first cake layer. Then, fill in the center, ensuring the icing is spread uniformly across the entire surface. Gently smooth the icing with an offset spatula, then carefully place the next cake layer on top and repeat the process. This creates a consistent layer of frosting and a stable foundation for your cake.
  • When layering a cake with a softer filling like jam or custard, create an “icing dam” to prevent spillage. After piping a ring of icing around the inside edges of the cake layer, spread your jam or custard within this barrier. The icing dam acts as a protective wall, keeping the softer filling contained and preventing it from seeping out the sides of your beautifully frosted cake. This ensures clean lines and a professional finish.

Essential Cake Decorating Techniques:

  • Cakes are much easier to handle and decorate when they are chilled or frozen. A firm cake is less crumbly and more forgiving, making it simpler to apply frosting and achieve smooth finishes. After your cake layers have cooled, wrap each tightly in plastic wrap and place them in the freezer for at least two hours, or even overnight. Once firm, remove them from the freezer, assemble with your chosen fillings, and proceed to decorate the outside with your favorite icing.
  • If time is of the essence and freezing isn’t an option, a “crumb coat” is your best friend. A crumb coat is a thin layer of frosting applied to the entire exterior of the cake (top and sides) using an offset spatula. Its purpose is to trap any loose crumbs, preventing them from mixing into your final decorative layer of frosting. After applying the crumb coat, chill the cake in the refrigerator for 20-25 minutes to allow it to firm up. Once firm, you can confidently apply your final layer of frosting for a perfectly smooth and crumb-free finish.

Remember, practice makes perfect when it comes to the art of cake decorating. With each cake you create, you’ll gain confidence and refine your techniques, finding that the process becomes smoother and more enjoyable every time!

Ingredients

  • ½ cup fresh lemon juice about 3-4 lemons
  • 3 tbsp grated lemon zest
  • ⅔ cup caster sugar
  • 8 egg yolks
  • 6 tbsp butter

Instructions

  • Start by heating up the lemon juice and the lemon zest in a small pot over medium heat.
  • While the juice is heating up, whisk the egg yolks and the sugar together in a separate, heatproof bowl until light and creamy.
  • When the lemon juice mixture comes to a gentle boil, slowly pour it into the egg yolk mixture in a thin stream, whisking vigorously the entire time. This crucial step is known as tempering, preventing the egg yolks from scrambling.
  • Return the tempered mixture to the pot and whisk continuously over medium heat. Continue whisking until the lemon curd thickens significantly, coating the back of a spoon. Do not allow it to boil vigorously.
  • Turn off the heat and let the curd rest for 5 minutes. Add in the cold butter, cut into small pieces, and use an immersion hand blender (or a whisk) to thoroughly incorporate it until the curd is smooth and glossy.
  • Pour the finished lemon curd into a clean, large bowl. Cover the surface directly with plastic wrap, ensuring the wrap touches the curd to prevent a skin from forming. Place in the fridge to chill for at least 30 minutes to an hour, or until completely set.

Notes

  • This recipe will yield approximately 1 & 1/2 cups of delicious lemon curd.
  • This homemade lemon curd can be stored, covered, in the fridge for 1-2 weeks.

Ingredients

  • 1 ⅔ cup all-purpose flour
  • 1 cup granulated sugar
  • ¼ tsp baking soda
  • 1 tsp baking powder
  • ¾ cup unsalted butter at room temperature
  • 3 egg whites
  • 3 tsp pure vanilla extract
  • ½ cup Greek yogurt
  • ½ cup whole milk or 2% milk

Instructions

  • Start by preheating your oven to 340 degrees Fahrenheit (170°C). Thoroughly butter and flour three 6-inch baking pans. To ensure beautifully even layers and flat tops, place pre-soaked wet cake strips (also known as baking strips) around the outside of each pan.
  • In a large mixing bowl, sift together all the dry ingredients, including the granulated sugar, flour, baking soda, and baking powder. Sifting ensures a light, airy cake texture and prevents lumps.
  • In a separate bowl, whisk together the wet ingredients: the room temperature unsalted butter, egg whites, pure vanilla extract, Greek yogurt, and milk. Whisk until they are well combined and smooth.
  • Pour the combined wet ingredients over the dry ingredients. Mix gently until just combined. Be careful not to overmix the batter, as this can develop too much gluten, resulting in a tough cake. A few small lumps are perfectly fine.
  • Divide the cake batter evenly among the three prepared 6-inch pans. Ensure the wet cake strips are securely in place. Bake for 25 to 30 minutes, or until the centers of the cakes are springy to the touch when lightly pressed, and a wooden skewer inserted into the center comes out clean.

Notes

  • You can easily double this recipe to make 8-inch cake layers, or triple it for larger 9-inch cake pans. Adjust baking times accordingly.
  • It’s perfectly normal to have tiny clumps of butter remaining after mixing your wet ingredients. These will fully incorporate and dissolve beautifully when you combine the wet and dry mixtures, contributing to the cake’s moist texture.

For the best flavor development and ease of assembly, I highly recommend starting this cake two days before your planned serving date. This allows ample time for the cake layers to cool completely and for you to assemble and frost it the following day. This approach ensures all the magnificent flavors have a chance to meld and deepen by the third day, resulting in a truly harmonious and delicious dessert.

While you could certainly attempt to make and assemble the entire cake in a single day, spreading the process over two days will significantly reduce your workload and stress, making the frosting and decorating much more enjoyable and achievable.

Assembling Your Stunning Layered Cake

  • To assemble your cake, begin by piping an even layer of buttercream between each cake layer, ensuring you smooth it out meticulously with an offset spatula. For the first two layers, create a secure “dam” by piping a ring of buttercream around the top edge of the cake before filling the center with your luscious lemon curd. This barrier will keep the curd perfectly contained and prevent it from spilling out.
  • Once all the cake layers are stacked, start by covering the entire top surface with the smooth Vanilla Bean Italian Buttercream. Then, pipe more buttercream generously around the outer sides of the cake. Use a clean cake scraper to smooth out the buttercream, rotating the cake on a turntable for the most even finish.
  • Chill the crumb-coated cake in the refrigerator for 15-30 minutes to allow the buttercream to firm up. This crucial step locks in any loose crumbs and creates a stable base for your final layer of frosting. After chilling, apply another layer of buttercream and smooth it out again with your scraper for a flawlessly smooth exterior.
  • Now comes the fun part: decorating with the remaining buttercream! For this particular cake, I used a decorative piping tip (such as a large star tip or an open-star tip) to create elegant swirls and dollops on top. I then adorned it with fresh, vibrant raspberries and delicate lemon slices, adding both visual appeal and a burst of complementary flavors. A final touch of piped lemon curd on top provided an extra pop of bright color and tangy goodness.

After capturing these beautiful photos, I discovered that this decadent dessert is truly best enjoyed when served with a generous handful of fresh raspberries. Their natural freshness and bright fruitiness perfectly cut through the richness of the cake and add a wonderful counterpoint to the tart lemon curd, creating an unforgettable culinary experience!
