Why This Mediterranean Chili is a Must-Try
As the leaves change and temperatures drop, our cravings often turn to hearty, warming, and deeply satisfying dishes. While Las Vegas might not experience a dramatic chill, I love embracing the seasonal spirit with cozy fall soups and chili recipes. This Mediterranean chili is more than just a meal; it’s an experience that truly makes the heart smile, blending the familiar comfort of chili with exciting new dimensions.
What makes this chili stand out? It’s the unique addition of mini meatballs, also known as kefta in Mediterranean cuisine. I know, meatballs in chili might sound unconventional, but hear me out! These aren’t your average large meatballs. They are perfectly bite-sized, designed to be enjoyed alongside a spoonful of beans and creamy avocado. Seasoned to perfection with my favorite Algerian spices and mixed with roasted red bell peppers, they add an incredible depth of flavor and a fantastic textural element that elevates the entire dish. This isn’t just chili; it’s a culinary journey.
The Best Mediterranean Chili: Flavor, Freshness, and Fullness
This isn’t merely a chili recipe; it’s a celebration of robust flavors, fresh ingredients, and wholesome goodness. It might take a little extra effort to craft the mini meatballs, but the payoff is immense. Imagine serving this on a weekend while watching a game, and seeing the pure delight on everyone’s faces as they savor each spoonful. This Mediterranean chili perfectly hits the spot, offering a harmonious blend of the best of both worlds:
- Healthy and Super Filling: Packed with nutritious ingredients, this chili will keep you satisfied without feeling heavy.
- Ideal for Meal Prep: Its robust flavors deepen overnight, making it an excellent choice to prepare ahead for quick and easy meals throughout the week.
- Rich in Protein: Featuring both plant-based protein from the beans and animal protein from the ground beef (and meatballs), it’s a powerhouse meal.
- A Fusion of Flavors: It’s bursting with authentic Mediterranean tastes while retaining the heartwarming essence of a traditional chili.

Mediterranean Chili Ingredients: A Symphony of Flavors
To embark on this flavorful journey and create this extraordinary chili, gather these essential ingredients. Each component plays a crucial role in building the layered taste profile that makes this recipe so special:
- Ground Beef: I typically opt for 85% lean ground beef, which provides a good balance of flavor and leanness. However, any type of ground beef will work beautifully in this recipe, or you can even substitute with ground turkey or lamb for a different nuance.
- Aromatic Vegetables (Mirepoix & More): Carrots, celery, onions, garlic, and green bell peppers form the foundation of any great soup or chili. These vegetables are sautéed to sweet perfection, contributing an incredible depth of flavor and aroma that sets the stage for the rest of the ingredients.
- Tomatoes: For convenience and consistency, I use a large can of diced tomatoes in their juice. This saves time on chopping and ensures a rich, tangy tomato base. If you prefer, fresh chopped tomatoes can also be used, though they might require a slightly longer simmer to break down.
- Tomato Paste: A small but mighty ingredient, tomato paste is essential for intensifying and concentrating the tomato flavor, giving the chili a more robust and savory profile.
- BUSH’S® Mild Pinto Chili Beans: These are a game-changer! I use two 16oz cans of BUSH’S Mild Pinto Chili Beans. The beauty of these beans is that they come pre-seasoned with a mild chili sauce, garlic, cumin, and chili peppers, which significantly enhances the overall flavor of your chili without extra effort. They are also vegetarian, gluten-free, and dairy-free, making this chili adaptable to various dietary needs.
- Roasted Red Bell Peppers: This is where the Mediterranean twist truly shines. Roasted red bell peppers add a smoky sweetness and a delightful texture. Reminiscent of my childhood in Algeria, where they were a staple next to my grandma’s house, they bring an authentic touch and a lovely color to the dish.
- Signature Spices: A carefully selected blend of salt, black pepper, garlic powder, Ras el Hanout, cumin, paprika, and bay leaves are vital. Ras el Hanout, a North African spice blend, is particularly important, as it infuses the chili with complex, warm, and earthy notes that are characteristic of Mediterranean cuisine.

Do I Need to Drain My Beans for This Chili Recipe?
Absolutely not! And this is a crucial detail that sets this recipe apart. The BUSH’S® Chili Beans we use are packed in a flavorful mild chili sauce, already seasoned with garlic, cumin, and chili peppers. This liquid isn’t just brine; it’s a rich, savory chili sauce that tastes like it’s been simmering for hours. Draining or rinsing these beans would mean discarding a significant amount of the pre-built flavor, which we definitely don’t want to do. So, when it comes to BUSH’S® Chili Beans, simply open the can and add them directly to your pot, sauce and all, for maximum flavor impact.

Step-by-Step: Crafting Your Mediterranean Chili
This recipe comes together in two main parts: preparing the delicious mini meatballs and then simmering the rich chili base. Each step is straightforward, promising a rewarding and incredibly flavorful meal.
Preparing the Flavorful Mini Meatballs (Kefta)
- In a medium bowl, combine 1/2 lb ground beef with 1/2 tsp cumin, 1/4 tsp black pepper, 1/2 tsp garlic powder, 1/2 tsp Ras el Hanout, 1 medium egg, 1 tbsp breadcrumbs, and 1/4 cup chopped roasted red bell peppers.
- Using your hands, gently mix all the ingredients until just combined. Be careful not to overmix, as this can make the meatballs tough.
- Take a teaspoon-sized portion of the beef mixture and roll it between your palms to form small, uniform meatballs. Place them on a plate and set aside. These mini meatballs will cook directly in the chili.
Assembling the Rich Chili Base
- Heat 2 tablespoons of olive oil in a large pot or Dutch oven over medium heat.
- Add 1 medium chopped brown onion, 1 ½ cups diced carrots, 1 ½ cups diced celery, 1 cup diced green bell pepper, and 4 large minced garlic cloves to the pot. Cook, stirring frequently, until the vegetables soften, which usually takes about 8-10 minutes.
- Add the remaining 1/2 lb ground beef to the pot. Cook, breaking the meat into smaller chunks with a spoon, for 5-6 minutes, or until it is no longer pink. Drain any excess fat if necessary.
- Stir in 2 tsp Ras el Hanout, 2 tsp cumin, 1 tsp paprika, 2 tsp salt, and 1 tsp black pepper. Cook for another minute, allowing the spices to become fragrant.
- Pour in one 28 oz can of diced tomatoes in juice, two 16 oz cans of BUSH’S® Mild Pinto Chili Beans (undrained, with their sauce), 1 tbsp tomato paste, 2 cups of water, and 2 large bay leaves. Stir everything together.
- Bring the chili to a boil over high heat. Once boiling, reduce the heat to medium-low, then gently add the prepared mini meatballs into the simmering chili.
- After 5 minutes, give the chili a good stir to ensure the meatballs are submerged. Let it simmer gently for 40-50 minutes, stirring occasionally, until the flavors have melded beautifully and the chili has thickened to your desired consistency.
- Taste the chili and adjust seasonings as needed, adding more salt or pepper if desired.
- Serve the hot chili in bowls and garnish generously with your favorite toppings.

Meatballs or No Meatballs? Personalizing Your Chili
While the mini meatballs are a fantastic, unique addition to this Mediterranean chili, they are an optional step. I understand that sometimes you might be short on time, or perhaps you prefer a more traditional chili texture without the added element of meatballs. However, I highly encourage you to try them at least once! In Algeria, where kefta (meatballs) are a common and beloved dish, they are often added to stews and soups to enhance the meal. Here, they not only offer a delightful visual appeal but also contribute an incredible textural contrast in every bite, making the chili even more satisfying and engaging to eat. If you choose to omit them, simply proceed with the chili base recipe, perhaps adding the extra 1/2 lb of ground beef directly to the pot with the vegetables in step 3 of the chili instructions, breaking it up and cooking it until browned.
Elevate Your Bowl: Delicious Mediterranean Chili Topping Ideas
A great bowl of chili isn’t complete without the perfect toppings! These garnishes add freshness, creaminess, crunch, and an extra layer of flavor that truly takes your Mediterranean chili to the next level. Don’t be shy about mixing and matching to create your ultimate bowl:
- Sour Cream or Greek Yogurt: For a cool, creamy tang that balances the rich flavors.
- Fresh Avocados: Diced or sliced, avocados add a buttery texture and healthy fats.
- Sliced Jalapeños: For those who love an extra kick of heat and a fresh, spicy crunch.
- Green Onions: Finely chopped, they offer a mild oniony bite and vibrant color.
- Grated Cheddar Cheese: A classic chili topping that melts beautifully into the warm stew.
- Fresh Cilantro or Parsley: Chopped fresh herbs brighten the dish and add an authentic Mediterranean touch.
- Sliced Radishes: Unexpected but delightful, they provide a peppery crunch.
- Shredded Lettuce: A cool, crisp contrast to the warm chili.
- Crushed Tortilla Chips: For a satisfying crunch and a hint of salt.
