Banana Bread Christmas Crack combines leftover banana bread with a buttery brown sugar toffee, melted milk chocolate, toasted walnuts and flaky sea salt, chilled until it snaps. I adapted this idea from thefoodarrondissement and used leftover brown butter banana bread for the base. Small adjustments to timing and technique are noted below so the layers set perfectly.

Quick note about baking time
When I first made this I poured the caramel over cool banana bread slices and followed the typical five-minute bake; the caramel needed a little longer. Instead of watching only the center, bake until the entire surface is actively bubbling — that may take 8–10 minutes depending on how cold your bread is. When the timing is right the layers fuse and you get the ideal crunchy, chewy texture.
Ingredients

- Banana bread, thinly sliced. Homemade is best; store-bought works. Chill to make thin slicing easier.
- Butter — 142 g (10 tbsp).
- Brown sugar — 150 g (3/4 cup, packed). Light brown sugar gives a balanced caramel flavor.
- Tony’s Chocolonely milk chocolate caramel sea salt bar — 180 g, broken into chunks. The toffee pieces are a lovely texture; if you don’t have this bar, use milk chocolate and sprinkle toffee bits.
- Dark chocolate chips — 1/3 cup. For pockets of deeper chocolate flavor.
- Toasted walnuts — 1/3 cup, chopped. Toasting brings out better crunch and flavor.
- Flaky sea salt, to finish.

How to Make Banana Bread Christmas Crack
- Preheat the oven to 180°C (350°F). Line a large baking tray with parchment and arrange thin banana bread slices in a single layer, covering as much surface as possible.
- In a saucepan over low–medium heat, melt the butter with the brown sugar. Bring to a gentle simmer and cook 6–8 minutes, stirring constantly, until the mixture thickens and turns a deep amber.
- Carefully pour the hot caramel over the banana bread and spread it evenly with an offset spatula.
- Bake 8–10 minutes, watching for the entire surface to be actively bubbling (not just the center).
- Remove the tray from the oven and immediately scatter the broken chocolate bar pieces and dark chocolate chips over the hot caramel. Let sit 2–3 minutes so the chocolate softens, then gently spread into an even layer.
- While the chocolate is still soft, sprinkle the chopped toasted walnuts and a few flakes of sea salt on top.
- Cool 10 minutes at room temperature, then transfer to the refrigerator for at least 2 hours to set. Break into pieces and serve cold for the best snap.

Tips so your caramel doesn’t split
- Use low to medium heat; high heat can separate the butter from the sugar.
- Stir gently and continuously until the butter is melted and fully combined, then let it simmer with only occasional stirring.
- Don’t walk away — caramel can go from perfect to broken very quickly.
If it does split
Remove the pan from the heat, add 1–2 tablespoons of hot water, and whisk vigorously until it comes back together. Return to low heat for a minute to finish.
How to Store It
Store in an airtight container in the fridge for up to one week, or freeze for up to one month. If stacking pieces, separate layers with parchment paper.
FAQs
Yes — slice it thinly and use the same method.
The tray likely needs more time. Keep baking until the whole surface is bubbling, up to 10 minutes.
The bread softens where it absorbs the caramel, which is intended. Chilling firms the pieces again so they’re dense and chewy with a crisp top.
Yes. It keeps well in the fridge for a week or in the freezer for a month, making it great for gifts.
